Pan Fried Minced Beef Garlic and Veggies

Ingredients

  • Minced Beef4 oz
  • Eggplant1
  • Zucchini1
  • Bell Pepper(Green, Red, Yellow)1 of each
  • Minced Garlic1 tbsp
Marinade:
  • Marinades for Meat:
  • Salt 1/2 tsp
  • Sugar 1/4 tsp
  • Pepper 1/8 tsp
Spices / Sauces:
  • Seasonings:
  • Black Vinegar 1 tbsp
  • Sugar 1 tsp

Directions

  • Marinate minced beef with mixed marinades for 15 minutes
  • Peel eggplant in stripe-pattern and cut into pieces. Rinse clean zucchini and cut into pieces. Remove seeds and pith of green, red, and yellow bell peppers. Cut into small pieces.
  • Heat oil. Stir fry eggplant and zucchini until soft. Add in assorted bell pepper, toss well and seasoning with salt and set aside
  • Heat oil again and sauté minced beef. Add garlic and stir fry until fragrance. Add mixed seasonings and bring to boil. Place on top of the zucchini & peppers. Ready to serve
