Marinate minced beef with mixed marinades for 15 minutes
Peel eggplant in stripe-pattern and cut into pieces. Rinse clean zucchini and cut into pieces. Remove seeds and pith of green, red, and yellow bell peppers. Cut into small pieces.
Heat oil. Stir fry eggplant and zucchini until soft. Add in assorted bell pepper, toss well and seasoning with salt and set aside
Heat oil again and sauté minced beef. Add garlic and stir fry until fragrance. Add mixed seasonings and bring to boil. Place on top of the zucchini & peppers. Ready to serve
