Taiwanese Chicken with Kiwi Fruit & Pistachios

Ingredients

  • Wingtat Taiwanese Chicken x1
  • Parsley (soak in salt water for 1-2mins)1 stalk
  • Green Onion (rinse & divide)1 stalk
  • Mashed Garlic1 tsp
  • Mashed Shallot1 tsp
  • Ginger3-4
  • Mushroom (rinsed & sliced)3
  • Carrot (sliced)1/2
  • Baked Cashews1/4 cup
  • Hulled Pistachios200 g
  • Kiwi Fruit (peeled)(Cut 2 into pieces, 1 into slic3slices
  • THICKENER:1 stalk
  • Miracle Whip1 tbsp
  • Sugar1tsp
  • Sugar1tsp
  • Cornstarch1tsp
  • Water1/3 cup
Marinade:
  • Cooking Wine1 tsp
  • Egg White1 tbsp
  • Pepper Powderdash
  • Sesame Oildash
  • Sugar1 tsp
  • Oyster Sauce1 tbsp
  • Kiwi Fruit Juice1 tbsp
  • Cornstarch2 tsp
  • Cooking Oil1 tbsp

Directions

  • Wash and clean chicken. Remove from bones and chopped. Add mixed marinade ingredients and marinated for 30 minutes.
  • Heat 3 tablespoons of oil in a wok. Sauté chopped green onion, garlic and ginger. Stir in shredded chicken until done. Add mushroom, carrot and mix well. Add thickener and bring to boil. Stir in kiwi fruit and green onion section. Stir and combine altogether. Dish up and sprinkle pistachios and cashews on top. Garnish with sliced kiwi fruit slices and parsley. Ready to serve.
