A simple, healthy recipe to make and enjoy in the Year of Rabbit. Carrot muffins are great for breakfast or snack. Carrots are an excellent source of vitamin A. Carrots also deliver a good dose of carbohydrates and fiber. Carbohydrates provide you with energy while fiber helps keep your digestion system working.

Ingredients

  • Flour1 ¼ cup
  • Baking powder½ tsp
  • Baking soda¼ tsp
  • Eggs2
  • Carrot (Shredded)1 cup
  • Butter4 oz
  • Milk1/3 cup
  • Sugar2/3 cup

Directions

  • Sieve flour, baking powder & baking soda in a large deep bowl.
  • Thaw butter in room temperature. Beat in eggs, blending well after adding milk & sugar to form egg mixture. Stir together dry ingredients and add egg mixture until well blended. Slightly stir in shredded carrot by hand.
  • Line paper cups into each muffin pan. Pour batter into each paper cup for 80% full. Bake at 350℉ preheated oven for 25 minutes until golden & crispy. Then ready to serve.
