  • Scald and rinse Wingtat Taiwanese Chicken then wash and wipe dry. Peel the pumpkin, remove the seeds, scrub clean, and cut into large pieces. Next, peel the turnips and cut into slices. Lastly soak the black eyed peas in water for 1 hour to remove the suds and loosen up the ginger by mashing it a little.
  • Bring the cups of water to a boil then place in the chicken, pumpkin pieces, turnips, black eyed peas, and ginger. Boil on maximum heat for 15 minutes then switch to a slow medium heat for 1 hour and 30 minutes and it will be ready to serve.
