Vancouver is a multicultural city where we are very blessed to enjoy an extensive variety of cuisines and ingredients. Here is a simple dish using some common Japanese cooking ingredients (miso, mirin and wasabi). The savory ingredients are used to marinate the chicken. Lastly, sprinkle some sesame and seaweed on top and ready to enjoy! (Alternatively, the recipe can be prepared with Wingtat RWA Chicken Whole Leg.)

Ingredients

Marinade:
  • Miso1 tbsp
  • Mirin2 tbsp
Spices / Sauces:
  • Minced Garlic2 tbsp
  • Mirin 1 tbsp
  • Sesame oil 1 tsp
  • Sugar 1 tsp
  • Wasabi 1.5 tbsp
  • Chicken Juice1/4 cup

Directions

  • Rinse and wipe dry chicken. Mix well all seasonings and marinate the chicken for 20 minutes. NOTE: poultry product alternative option: Wingtat RWA Chicken Whole Leg.
  • Crush the ginger. Remove roots of scallion, then cut them into 2 inches sections. Stuff the chicken with ginger and scallion then steam for 30 minutes. Save the chicken juice for later use. Let the chicken cool down a bit then cut into big pieces and arrange them in plate.
  • In a pan, heat oil and fry minced garlic until golden brown. Add remaining spices and mix well. Then pour over the chicken; lastly, sprinkle with sesame and seaweed. Ready to serve.
