Directions

  • Scald Taiwanese chicken in boiled water and drain dry. Wash winter melon. Remove its seed. Cut winter melon and pineapple into large chunks. Flatten the ginger. Soak pearl barley.
  • Boil the water, put Taiwanese chicken, winter melon, pearl barley, lotus leaves, and ginger slices: boil for 15 minutes on high heat. Reduce to medium to medium or low heat for 1.5 hours. Put in pineapple for 10 minutes, the soup is ready to be served.
