The elders always recommend the traditional practice of eating a “meal just before dawn” for postpartum moms. A meal on an empty stomach helps with absorbing nutrients which aides to speed up the body‘s recovery process. The chicken basmati rice has the essential amount of rice that a postpartum mother needs. Many young, modern mothers are afraid of the amount of the calories from eating rice. Basmati rice is a good choice as it is less sticky and has relatively low glycemic index. By cooking it together with stir fried, fragrant Wingtat Canada Chicken meat, the rice becomes tasty, the meat is very tender to enjoy, and the overall meal is nutritious. Ingredients

  • Wingtat Canada Chicken x1
  • Basmati Rice1cup
  • Onion1/2cup
  • Red And Green Bell Pepper1 each
  • Corn Kernels1/2 cup
  • Curry Powder1tsp
  • Turmeric Powder1/2tsp
  • Chopped Garlic1tsp
  • Chicken Broth1cup
Marinade:
  • Salt1tsp
  • Lemon Juice1tbsp
  • Curry Powder1/2tsp
Spices / Sauces:
  • Salt1/4tsp
  • Sugar1/2tsp

Directions

  • Wipe dry chicken and cut into dices. Marinate with mixed marinade for 15 minutes. Remove seed of bell pepper and pith then diced. Peel the onions and chop into pieces. Cook corn in boiling water and drain dry. Rinse the Basmati rice. NOTE: poultry product alternative option: Wingtat RWA Boneless Chicken Leg.
  • Heat a little oil in a wok and brown the minced garlic, peppers and corn kernels, then remove from the pot. Add crushed garlic, curry powder and turmeric powder over low heat, fry chicken until done. Pour chicken broth into the pot and add the basmati rice, cook for 15 minutes over low heat then roast 10 more minutes.
  • Add in chopped garlic, bell peppers and corn. Impart a subtle flavor and mix well completely then ready to serve.
