Dried Tangerine Peel

Dried Longan Fruits

Directions
Scald partridges in boiling water to remove fat and grease. Soak cordyceps and rinse clean. Soak dried tangerine peel until tender and remove pith.
Place the rinsed partridges in a casserole. Add cordyceps, ginger, dried tangerine peel, and 6 cups of water. Steam above water for 2 hours.
Rinse dried longan fruits clean. Add to the soup and steam for another one hour. Seasoning with salt and serve hot.
