Directions

  • Scald partridges in boiling water to remove fat and grease. Soak cordyceps and rinse clean. Soak dried tangerine peel until tender and remove pith.
  • Place the rinsed partridges in a casserole. Add cordyceps, ginger, dried tangerine peel, and 6 cups of water. Steam above water for 2 hours.
  • Rinse dried longan fruits clean. Add to the soup and steam for another one hour. Seasoning with salt and serve hot.
