The Mid-Autumn Festival is a time to celebrate family reunion. The whole family gathers together, around a circular table, to enjoy a great meal  -- a very heartwarming time. Here is a delicious dish in the shape of a circle that perfectly matches the festival of Full Moon. Winter Melon is suitable for all year around and helps digestion. After the melon is deskinned, it looks like beautiful jade. The melon is light in flavor, so Wingtat Canada Chicken and shrimp are used to enhance the taste of the dish. The steamed quail eggs resemble pearls, making this festival dish more exquisite for the whole family to enjoy during Mid Autumn Festival.

Ingredients

Marinade:
  • Chicken Marinates:
  • Salt2/3 tsp
  • Ginger Wine 1 tbsp
  • Shrimp Marinates:
  • Salt1/8 tsp
  • Pepper Powder1/8 tsp
Spices / Sauces:
  • Salt1/4 tsp
  • Sugar1/4 tsp
  • Cornstarch1/2 tsp
  • Steamed Wintermelon Sauce 1/4 cup

Directions

  • Debone the Canada Chicken and cut into chicken fillets. Marinate for 10 minutes.
  • Steam the quail eggs until cooked and remove the shell. Soak the mushrooms until tender, remove stalks and chop into thin slices. Devein shrimps and remove the shell. Marinate for 10 minutes.
  • Pare and core the wintermelon. Spoon out some melon flesh, add in broth and steam for 20 minutes. Save the steamed sauce for later use.
  • Heat oil. Add in diced garlic and shrimp meat, stir-fry until well done. Remove from stove. Stir-fry marinated chicken fillet and mushrooms until cooked. Add in previously cooked shrimp, sliced carrot, seasonings and stir-fry well. Place in the Wintermelon Ring. Place quail eggs on the wintermelon. This exquisite and delicious dish is ready to serve.
