Many guests will arrive earlier at holiday parties with time to mingle and catch up, while children enjoy some playtime before dinner. The host family will have appetizers prepared. This pie consists: tender and smooth Cornish chicken meat, purple sweet potato that is rich in antioxidant and also improves intestinal health, and the golden millet which can supplement the nutrients needed for cell growth, together with organic free range eggs that are rich in protein. The pie is colourful in appearance and can be prepared in advance. It is an ideal appetizer for a gathering during the holidays.

Ingredients

  • Wingtat Cornish Hen x1
  • Organic Free Range Eggs2
  • Millet1/2 cup
  • Purple Yam1/2 cup
  • Peas1/2 cup
  • Bread Crumbs1 cup
  • Shredded Cheese1/2 cup
  • Parsleygarnish
Marinade:
  • Salt2/3 tsp
  • Lemon Juice1 tbsp
Spices / Sauces:
  • Salt1/4 tsp
  • Sugar1/4 tsp
  • White Pepper1/4 tsp

Directions

  • Cut out and take the Cornish chicken breast. Dice the breast and marinate for 10 minutes. Soak the millet in water for a while, and steam for 10 minutes. Peel the purple yam and cook well. Boil peas in water and drain.
  • Heat oil. Stir-fry marinated chicken until cooked. Add in millet, purple yam and peas. Add in marinates and stir-fry well. Remove from stove.
  • Beat eggs well and mix with chicken stuffing. Put in baking pie dish, top with bread crumbs and shredded cheese. Place in pre-heated oven and bake at 350˚F for 10 minutes. Remove from oven and drizzle with diced parsley on top.
