Sticky rice adds great warmth and comfort to the cold winter. During the lunar new year season, pan-fried rice cake and hot tea are also essential for welcoming guests. However, a golden sticky rice roll with chicken would be even more impressive and welcoming. The sticky rice with mushroom and shrimp together with pan-fried chicken fillets in the middle, makes for a roll that is with crispy beancurd on the outside, and soft sticky rice and chicken on the inside; this lunar new year dish is delicious.

Ingredients

Marinade:
  • Salt2/3 tsp
  • Ginger Wine1 tbsp
Spices / Sauces:
  • Dark Soy Sauce1 tsp
  • Salt1/4 tsp
  • Sugar1/4 tsp
  • Sesame Oil 1 tsp

Directions

  • Cut Chicken breast into 4 inch strips. Cut other parts into small pieces and marinate for 10 minutes.
  • Soak dried mushrooms until tender, remove stalk and cut into small pieces. Soak dried shrimp until tender. Stir-fry together. Add into glutinous rice. Add seasonings and set aside to cool.
  • Heat oil. Pan-fry Chicken strip until cooked. Remove from stove. Pan-fry diced chicken until cooked. Mix into glutinous rice.
  • Wipe and wet big beancurd skin until tender. Cut into multiple big rectangles. Simmered some glutinous rice on top, add a chicken strip in the middle. Roll it. Pan-fry with oil and serve when it cools down.
