Having the whole family reunited and together around the table to enjoy the Lunar New Year Eve dinner one of the greatest and joyful times of the year. Poultry entrees will always be one of the main dishes in celebrating Lunar New Year. The four ingredients (four treasures) being chestnuts, quail eggs, dried longans and red dates enhance the flavor and color of this dish. Quail eggs are delicate and delicious, and chestnuts are tender; both ingredients are great for winter dishes. Red dates and dried longan meat are sweet, which enrich the chicken meat’s flavor; the sweetness is a flavor children would like! The elders in the family will be happy seeing all family members enjoying this reunion dish during the New Year.

Ingredients

Marinade:
  • Salt1 tbsp
  • Ginger Wine2 tbsp
  • Dark Soy Sauce2 tsp
Spices / Sauces:
  • Dark Soy Sauce½ tsp
  • Chinese Licorice1 slice
  • Water1 cup

Directions

  • Clean and wipe dry the Wingtat Canada Chicken, and marinate for 15 minutes. Steam cook the Wingtat Quail Eggs on a dish, then soak in frozen water to remove the shells. Soak and pit the red dates, and remove the skin of the dried scallions.
  • Simmer ginger slices and dried scallions in hot oil. Add in the chicken and sauté lightly before adding in wine, seasoning, chestnuts, red dates, and dried longan. Cook in medium-low heat for 30 minutes. Remember to flip the chicken over while it slowly cooks.
  • Let the chicken rest and cool down before cutting into pieces and place it on a plate, plate the dish with quail eggs, chestnuts, red dates and add the sauce on top. The dish is ready to serve.
