Chia seed is the seed of sage and it contains a variety of high-density nutrients. Known as one of the most nutritious grain, it also contains high-quality fiber, 0 calories and therefore will not increase blood sugar levels. Chia seeds contain an abundance of plant protein and can be easily absorbed by the human body, thereby promoting metabolism, reduces bad cholesterol build-up, and prevent cardiovascular diseases. Using such nutritious grain in addition with free range eggs, which contains 8 types of essential amino acid for the human body, mixed in with butter and smooth icing, will create fragrant, wholesome, delicious cookies that will be the ideal dessert after meals or an edible holiday gift.

Ingredients

  • Flour1 3/4 Cup
  • Chia Seed1 tbsp
  • Icing Sugar1 cup
  • Butter4 oz
  • Free-Range Eggs2
  • Salt1/4 tsp
  • Parchment Paper1

Directions

  • Soak Chia seeds in 3/4 cup of cold water for 10 mins, drain dry when seeds start to expand.
  • Silt flour and salt and set aside.
  • Leave butter in room temperature to soften, mix it with icing sugar, then add free-range eggs and mix well.
  • Little by little add flour mix into butter mix, gently stir well, add in chia seeds at the end.
  • Use parchment paper to wrap the dough into tube shape, put the dough in freezer for 1 hour, take out and cut into slices, then put it in pre-heat oven, bake dough in 350°F for 20 mins, take it out from the oven and let it cool down.
