Yellow Chive & Duck Soup

Ingredients

  • Wingtat Young Duck x1/2
  • Water Chestnut Powder1/4 cup
  • Chicken Broth5 cups
  • Chinese Ham2 oz
  • Yellow Chive2 oz
  • Chinese Mushroom3 pcs
Marinade:
  • Green Onion1 stalk
  • Steamed Ingredients2 slices
  • Salt1 tbsp

Directions

  • Wash & clean duck. Wipe dry. Coat duck with salt completely and marinate for 30 minutes. Add ginger slices & green onion. Put into steamer & steam for 20 minutes. Cut into shreds after cooling.
  • Soak Chinese mushroom until tender. Remove stalk & shredded. Steam Chinese ham until done. Shredded after cooling. Wash yellow chive and cut into sections.
  • Heat oil in a wok. Sauté ginger slices & Chinese mushroom. Add chicken broth & bring to boil. Stir in shredded duck. Thickening with water chestnut powder and water. Coloring with dash of dark soy sauce. Add young chive and dish up. Decorated with shredded Chinese ham on top and hot serve.
