Preserved Plums & Fish Soup

Ingredients

  • Fish (Fresh)1 (about 1-1/3 lb)
  • Preserved Plums6
  • Bitter Melon1/2 lb
  • Red Chili2
  • Ginger2 Slices
  • Parsley1 stk
Marinade:
  • Salt1 tsp
  • Pepper Powder1/2 tsp
  • Cooking Wine1 tbsp

Directions

  • Wash & clean fish. Wipe dry. Marinate with mixed marinades for 15 minutes. Sauté with ginger slices until golden brown.
  • Cut bitter melon into halves. Remove pith and cut into thin slices. Wash & clean red chili. Thinly sliced. Soak parsley in dilute salt water & sectioned.
  • Bring 6 cups of water to boil. Add preserved plum, ginger slices & red chili and cook for 10 minutes. Place in fried fish and simmer for another 10 minutes. Add bitter melon slices and seasoning with dash of salt. Garnish with parsley and hot serve.
