Wild Rice with Shredded Chicken

Ingredients

Marinade:
  • Lemon Juice1 tsp
  • Sugar1/4 tsp
  • Chicken Marinades:Salt1/4 tsp
  • Pepper1/8 tsp

Directions

  • Wild rice & brown rice soak separately in water for 2 hours. Rinse white rice and drain.
  • Rinse & clean Wingtat Taiwanese chicken meat, wipe dry and shredded. Marinated with mixed marinades for 15 minutes. Remove pith of red pepper, seeded and finely diced. Peel onion and finely diced.
  • Heat oil in a wok. Saute diced onion. Stir in chicken and fry until done. Set aside. Melt butter in a pot and pour in chicken broth. Add in 3 kinds of rice. Bring broth to boil. Then turn to low heat and covered. Place shredded chicken and diced red pepper on top. Cover the pot again for 10 minutes. Serve hot immediately.
