February is a sweet upon sweeter month. Lantern Festival is on Feb.11th (day 15 of lunar new year), followed by Valentine’s Day on Feb.14th! Happy Lantern Festival & Valentine’s Day! Maple Hill Organic Free Range Eggs are an excellent source of protein. Being a good dinner host, one would like to prepare ingredients, as well as, a well thought out menu in advance to cater to your guests. If your guests includes some elderly people, they often prefer some food with rice (believing that a bowl of rice gives the needed strength and energy). Chicken, Vegetable & Rice in Soup is a simple recipe I recommend. Chicken can be steamed in advance and the meat would be tender; remember to keep the "chicken juice" to further enhance the flavor of the rice soup. Stir fry some colorful vegetables to mix into the rice soup. Your guests would surely see and taste the thoughtfulness you put into preparing this recipe.
