Recent Avian Influenza Outbreak in the Fraser Valley

We want to assure our valued customers and members that Wingtat’s products have not been affected by the recent Avian Influenza Outbreak in the Fraser Valley. Proper biosecurity measures were implemented at our plant and on the farms since the last outbreak in 2004 and we and our growers have been vigilant on biosecurity to minimize the risk. It has been confirmed by Canadian Food Inspection Agency (CFIA) that there are two farms in Fraser Valley, a turkey farm in Abbotsford and a broiler breeder farm in Chilliwack, affected by the avian flu. CFIA inspectors have informed us that farms within the 15km radius of the original 2 farms are under surveillance to monitor the outbreak. To date, Canadian Food Inspection Agency has informed us no other additional preventative measures are required. Our products are safe for consumption.

From CFIA website on Dec 3, 2014: CFIA reminds the public that “Avian influenza viruses do not pose risks to food safety when poultry and poultry products are properly handled and cooked. Avian influenza rarely affects humans that do not have consistent contact with infected birds. Public health authorities stand ready to take precautionary measures as warranted.” (http://www.inspection.gc.ca/animals/terrestrial-animals/diseases/reportable/ai/statement-2014-12-03/eng/1417644590985/1417644674399)

Along with the rest of the Canadian poultry sector, Wingtat Game Bird Packers practices a high level of biosecurity on our premises to reduce the risk of disease spread to our premises and will report any suspicious symptoms in our flocks to the CFIA. As of date, none of Wingtat's flocks and premises have been affected by the Avian Influenza Outbreak.

For further information and updates, please go to the Canadian Food Inspection Agency website: www.inspection.gc.ca

In this issue, Mrs. Chiu will be introducing two delicious recipes by using Wingtat Members' Survey No.1 favorite Wingtat product - "Wingtat Canada Chicken" and Wingtat Organic Free Run Chicken Egg as the main ingredients to prepare a lovely holiday dinner for your family and friends to enjoy. Stewed chicken with onion and red wine sauce as the main entrée and an orange crepe as a dessert make a perfect combo for your dinner party.

Christmas is one of the most exciting moments in a year; families, friends all embraced together to celebrate the festival. A lot of parties are using red wine to entertain guests, but wine may not be suitable for everyone, especially the elderly people and young children. However, if we use red wine as an ingredient to stew chicken, the alcohol will evaporate over time, the remaining liquid will absorb by the chicken, and make it full of grape flavour. By adding red and green vegetable to the dish, we make it perfect for the christmas.

The best way to complete a perfect dinner is to have a special dessert. Wingtat Organic Free Run Chicken Eggs are smooth and have rich fragrant which are perfect for crepes. When you are making the flour mixture, remember to add in the flour and fresh milk slowly to avoid the mixture getting lumpy. This way the crepe will be smooth. Soak the orange peel into hot water, and then slice into orange zest. By doing this, the orange dressing won’t taste bitter and still have full of orange aroma.
